2 cups cooked chicken (can be canned or frozen chicken that you cook ahead)
¼ cup chopped onion
1 cup finely diced celery
1 tbsp butter
1 can cream of chicken soup
1/3 cup chicken broth
1 tbsp soy sauce
1 cup chow mein noodles
1/3 cup cashew nuts
Sauté onion and celery in butter, add soup, chicken broth and soy sauce. Add chicken, simmer for a few minutes. Pour into 1-quart casserole, sprinkle with chow mein noodles and nuts. Bake at 350° F for 20 minutes.
I made this for dinner tonight, it's so good! It's one of my favorite main dishes and I love to make it. I think Mom got this from Carolyn. We would have this a lot at home.
