Zip-Lock Bag Fudge


2 oz. (1T) Cream Cheese
3 cups (3/4 cup) Powdered Sugar
1/4 cup (1T) Margarine
1/4 cup (1T) Cocoa

Measure ingredients in a gallon freezer zip-lock bag. Push the air out of the bag and seal well.
Squish the mixture to mix well. It will be dry at first, but will soon become fudge. It will take about 20 minutes of work.
Slit the sides of the zip-lock bag and roll the fudge between the plastic of the bag to 1/2" thick and cut into squares.
Press in chopped nuts if desired.

We made this in my cooking class. It is so good! The amounts of ingredients in parentheses are for making a single serving in a sandwich size bag.

Cheesy Fiesta Pasta Bake

2 cups Pasta, medium
1/2 cup Milk
3 handfuls Cheddar Cheese, grated (it needs to be very cheesy)
1 T Butter
1/4 t Cumin
1/4 t Garlic Powder
1/2 Tomato, chopped
1/2 Green Pepper, chopped
6 Saltine Crackers, crushed

Cook pasta noodles, drain.
Add milk, butter, and cheese. Mix until butter and cheese are melted and well mixed.
Mix in seasonings and small pieces of chopped vegetables.
Put in a 1 1/2 quart baking dish. Sprinkle with more cheese and top with crushed saltine crackers.
Bake at 350 for 20 minutes.

This is a very good homemade Macaroni & Cheese meal. I like how it has real cheese that I eat and the vegetables make it crispy. I used red peppers. This seems like kids will like it as well as adults, but I haven't tried it on any kids so you'll have to tell me. I got this idea from the Sam's Club & Craft 2 Weeks of Meals but changed it a bit. They say this makes 5 servings but Brian and I ate the whole thing by ourselves because it was so good. If you make it like Kraft then it should cost about $5.

BBQ Chicken Ranch Pizza

Toppings
Chicken
(Marinate in BBQ sauce for an hour or so then cook on the BBQ and cut into small pieces)
BBQ Sauce
Ranch
Tomatoes (chopped)
Bacon Bits
Mozzarella Cheese
Parmesan Cheese

Pizza Dough
2 t Instant Yeast
1/2 t Sugar
1 1/2 cups Warm Water
1 t Salt
2 T Olive Oil
3 1/3 cups Flour

Mix yeast, sugar, and water and let sit 1-2 minutes.
Add the rest of the ingredients, using enough flour to make a soft dough. Knead a few times.
Roll out on a large greased cookie sheet. Poke dough all over with a fork.
Bake at 475 degrees for about 5 minutes.
Remove from oven and add toppings. Bake for 10-12 more minutes

I got this idea from Jenna's Recipe Blog. This pizza is so delicious! I love the BBQ chicken with the ranch. This dough is really good and quick.

Sugar Cookie Bars


1 cup butter, softened
2 cups sugar
4 eggs
2 tsp. vanilla
5 cups flour
1 tsp. salt
1/2 tsp. soda

Cream butter and sugar until fluffy.
Add eggs, one at a time, mixing after each egg. Add vanilla and mix well.
In a separate bowl combine flour, salt and soda and stir with a whisk to combine. Add to wet mixture and mix just until combined.
Spread on a greased baking sheet (use a 13x18 pan). Bake at 375 degrees for 10-15 minutes, until light golden brown or until a toothpick comes out clean. Cool completely and frost.

Frosting
1/2 cup butter, softened
1/2 cup shortening
1 tsp. vanilla
pinch of salt
4 cups powdered sugar
5 Tbsp. milk
food coloring

For frosting, combine butter and shortening until smooth and creamy.
Add vanilla and salt.
Add powdered sugar in 1-2 cup increments until combined, then add milk and mix until smooth and spreading consistency.
Spread over cooled cookie.

This is from Brian's sister's recipe blog My Favorite Recipes. I made these and they are really good although I had to cook them 6 extra minutes either because I am at a high altitude or they were just too thick. Anyways, these are great especially if you don't want to roll and cut out millions of cookies.

Play Dough Cookies


I haven't tired this recipe but it definitely looks like a fun one to make with the kids or that the kids would love to eat! If anyone tries these be sure to comment and share what you think of them, I'm thinking they'll just taste like sugar cookies, but they sure are fun!

Play Dough Cookies

3/4 cup butter
3oz cream cheese
1 cup sugar
1 egg
1 tsp vanilla extract
2 3/4 cup flour
1 tsp baking powder
1/4 tsp salt
assorted food coloring (gel or paste works best)

In a bowl cream butter, cream cheese and sugar until fluffy. Add eggs and vanilla. Beat until smooth.

In a bowl combine flour, baking powder, and salt. Add dry ingredients to the creamed mixture. Stir until soft dough forms. Divide dough into fourths. Tint each with a different food coloring. Wrap in plastic and chill for two hours. (Stick it in the freezer for 15 minutes if you don't like to wait)

Preheat the oven to 350 degrees. Shape colors into 3/4 inch balls. For each cookie place one pink, one orange, one green, and one blue ball together and roll to make one giant ball. Roll into a 12 inch long snake, and then starting at one end coil roll to make a cookie. Place cookies 2 to 3 inches apart on greased cookie sheet to allow for spreading.

Bake for 8 minutes or until lightly browned. Cool and store in an airtight container. Enjoy!
