
These were really good and Laura even ended up making them for her roommates because they are pretty easy.
Foil Pack Taco Chicken
4 small boneless skinless chicken breast halves (1 lb.)
4 tsp. Taco Seasoning Mix
1/2 lb. red potatoes, thinly sliced (about 2 cups)
3/4 cup Shredded Mexican Style Cheese
1/2 cup Salsa
1/4 cup Sour Cream (optional)
HEAT oven to 400°F. Sprinkle chicken with seasoning mix. Place 1/2 cup potatoes on center of each of four large sheets of heavy-duty foil; top with chicken, cheese and salsa.
BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch baking pan.
BAKE 30 to 35 min. or until chicken is cooked through (165°F). Cool 5 min. Cut slits in foil to release steam before opening. Top with sour cream.

Actually they were for my dinner group AND my roommates. That's like ten people who liked them.
By the way I didn't really measure out stuff I just made them so they looked the right size. It worked well. Except now I need to buy more cheese. I'm all out.
:) I didn't really measure them very well either, I mean I tried because I was kind of low on a few things- like the potatoes and I had to make so many of them for us but on some of the stuff I just put what looked good on it. I'll get to posting that other one with the rice in it tomorrow. I'm glad everyone liked them!
I made this for my dinner group and they loved it! It was a big hit. Also it was really, really easy clean up. So I was happy about this recipe
I made this again the other day and I had to cook it a lot longer than 35 minutes. So just check if the chicken is cooked all the before you eat it.
