2 cups Pasta, medium
1/2 cup Milk
3 handfuls Cheddar Cheese, grated (it needs to be very cheesy)
1 T Butter
1/4 t Cumin
1/4 t Garlic Powder
1/2 Tomato, chopped
1/2 Green Pepper, chopped
6 Saltine Crackers, crushed
Cook pasta noodles, drain.
Add milk, butter, and cheese. Mix until butter and cheese are melted and well mixed.
Mix in seasonings and small pieces of chopped vegetables.
Put in a 1 1/2 quart baking dish. Sprinkle with more cheese and top with crushed saltine crackers.
Bake at 350 for 20 minutes.
This is a very good homemade Macaroni & Cheese meal. I like how it has real cheese that I eat and the vegetables make it crispy. I used red peppers. This seems like kids will like it as well as adults, but I haven't tried it on any kids so you'll have to tell me. I got this idea from the Sam's Club & Craft 2 Weeks of Meals but changed it a bit. They say this makes 5 servings but Brian and I ate the whole thing by ourselves because it was so good. If you make it like Kraft then it should cost about $5.

I could probably even use my pasta from the 10 boxes of free pasta salad I got last week at Albertsons on this because I'm not sure when I'll ever use 10 boxes of pasta salad- of course it will probably keep but it might be a good thing to use it for since I don't have pasta. I'll let you know if the kids like it- sounds like they will but I'm not sure about Josh :)
You're going to use pasta salad? Is it put together yourself pasta salad and you are only going to use the noodles? That would be gross with the whole salad.
LOL- it's a box kit that has pasta in it, and then you just add mayonnaise or Italian dressing or whatever it calls for, so yes I would just use the dry pasta out of it :).
