Bob's Shepherds Pie

  • 1 lb ground beef
  • 1 can tomato soup
  • 1 can green beans
  • 1/4 cup minced onion (optional)
  • 1/4 cup sliced black olives (optional)
  • mashed potatoes (4-5 medium potatoes or 3-4 cups instant)
  • 1 grated cheddar cheese
Brown the ground beef, drain. Stir in tomato soup (do not add water), green beans, onion and olives. Put into a large bowl or casserole dish. Spread mashed potatoes on top, sprinkle cheese on top of potatoes. If you'd like the cheese melted, place the entire dish in the oven on broil until cheese is melted.

This is a classic in our house. It makes great leftovers for Bob to take to work the next day. If you're making the mashed potatoes from scratch, start them before browning the ground beef.
